Mario Kart World features 50 different playable characters, with a whopping 18 that need to be unlocked. It might be surprising to not see prominent characters like Princess Daisy and Donkey Kong on the starting roster, but their absence serves as extra motivation to explore more of what the game has to offer. Thankfully, you don't have to work too hard to completely fill out Mario Kart World's roster. You're just going to need a good amount of patience.
Every Grand Prix cup in Mario Kart World has a unique character associated with it that you can unlock. You can actually roughly tell who it is for each cup once you've started racing, as they'll serve as your main rival through the 4 races. They also have a thematic connection to one of the courses, like Donkey Kong with DK Spaceport.

As you can see, the unlock requirements aren't very demanding. You don't even need to win any of the cups. You just need to finish them out.
The new Kamek item introduced in Mario Kart World is what you'll need to unlock the rest of the cast. Unfortunately, here is where players are going to run into a lot of problems if they want to unlock everything quickly. The Kamek item has various different effects that it can use, one of them being a mass character transformation. Getting turned into one of the available creature characters in the game is how you unlock them. This means that you're going to rely completely on RNG.
While some guides may swear that the unlockable creature characters each require you to be on a certain course, there's more randomness than is let on. These creature characters appear to have Pokémon-style encounter rates, with there being multiple possible transformations per each course. The encounter rates don't seem to be entirely random, though. The beach-related characters do seem to appear more in water-themed courses, for example. We'll be sure to update this if anyone properly discovers how this all works.

Kamek can also transform you into something like a Goomba, which obviously isn't very helpful. For most players, unlocking all these characters is something you'll just have to do passively. Trying to speed up the process isn't going to be a fun time.
